Structure and properties

Azorubin (C20H12N2Na2O7S2, Mr = 502.4 g/mol) belongs to the azo dyes. It is a naphthalenesulfonic acid. Azorubine is produced synthetically (artificially) and exists as a sodium salt and reddish-brown crystalline powder that is soluble in water. Azorubin is structurally closely related to the dye amaranth (E 123).

Effects

Azorubin is dye that gives red color to products.

Fields of application

For coloring food, cosmetics and pharmaceuticals.

Adverse effects

Azorubin may cause pseudoallergic reactions (intolerance reactions) in sensitive individuals. It has been associated with the attention-deficit/hyperactivity disorder ADHD. In the EU, foods containing azorubin must carry the warning “May impair activity and attention in children.” However, the link is controversial. In many countries, such labeling is not required.
