Barbecue: with Bread and Finger Food

Fancy and quite easy to handle on the grill are all kinds of finger food creations such as mini pizza, tomato mozzarella bruschetta, Tex-Mex burger or Mexican tortilla. Not only as a side dish, but also as an appetizer and snack for in between, they help to cleverly bridge the waiting time for the sausage.

For beginners…

For beginners, bruschetta is recommended in many variations. For the uncomplicated lightning recipe you need only a few ingredients, such as a few slices of white bread, ripe cocktail tomatoes, finely chopped basil, olive oil, garlic cloves, salt and some mozzarella. The bread slices are coated with oil on each side and pre-toasted on the grill. The freshly toasted breads are then rubbed vigorously with the peeled garlic cloves and again drizzled with oil. Gourmets skin and dice the grilled cocktail tomatoes, then spread them on the bread slices along with the rest of the ingredients.

… And advanced

Advanced cooks can try their hand at grilled pizza. The mini pizza snack works similarly, except that here a fresh yeast dough comes into play as a base for tomatoes, basil, cheese, etc. Pre-bake the small, flat-shaped dough blanks on a well-greased baking sheet on the hottest part in the center of the grill until crispy and firm on the underside. After about a minute, the mini pizza blank can be turned over with the help of grill tongs. Then move the baking sheet to a less hot spot and brush the top with oil. All the ingredients can now be spread on the mini breads. The topped pizzas then need to grill for another minute or two until the cheese has melted on the topping. Easy and tasty are also grilled rolls topped with cheese or stuffed bread. To prevent bread from browning too much on open grills, it’s wise to stretch a piece of aluminum foil over the grate. Tortillas from a charcoal grill are ready to serve this way in as little as 15 seconds from each side.
