The pungent substances contained in ginger reflexively excite the heat receptors of the oral mucosa, which leads to the promotion of saliva and gastric juice secretion. Indirectly, this and other mechanisms also promote bile secretion. In humans, ginger is also thought to increase intestinal motility and have anti-inflammatory and antihypertensive effects.

Furthermore, ginger also appears to have an effect on the central nervous system. By blocking certain receptors that respond to the nervous transmitter serotonin, there is a nausea-reducing (antiemetic) effect.
