Maple syrup is available in, for example, pharmacies and drugstores and wholesale from various manufacturers. There are several grades of quality on sale, which differ in color and taste. According to increasing coloration: Grade AA, Grade A, Grade B, Grade C and Grade D. Light-colored products (Grade A) are considered to be of higher quality than dark (Grade D).

Production

Maple syrup is made from the sap of the sugar maple Marsh. (Aceraceae) and other trees of the genus. The colorless sap is heated and concentrated by evaporation. About 40 liters of sap are needed for one liter of the yellow-brown syrup. Maple syrup is mainly produced in North America and Canada. Maple sugar can be obtained by further evaporation.

Ingredients

The syrup contains mainly sugar (mainly sucrose) and water, as well as amino acids, proteins, organic acids, phenolic substances and minerals. Some ingredients are formed only in the course of production. Depending on the manufacturing process and the starting material, the composition varies. As a natural product, maple syrup is not a precisely defined substance.

Application

Maple syrup is mainly used as a sweetener. It contains flavonoids with antioxidant, antimutagenic, anti-inflammatory and antitumor properties, so it is also considered to have health benefits.
