The nutritional recommendations for fatty liver or fatty liver hepatitis are aimed at different things. Many patients with fatty liver are suffering from over-nutrition or a metabolic syndrome. A central risk factor for the development of such a fatty liver are all the conditions that bring about insulin resistance, such as diabetes mellitus type 2 or a fat metabolism disorder.

In general, moderate weight reduction and a change in diet is therefore recommended. Several studies have shown that especially high-calorie snacks and snacks between meals, as well as sweetened drinks and sugary juices have a negative effect on the development of fatty liver. Mediterranean cuisine, on the other hand, is said to be protective.

It is recommended to cook with cold pressed olive oil. This also seems to have a positive effect on the cardiovascular risk of those affected. Besides olive oil, other oils such as rapeseed oil, walnut oil and wheat germ oil are good alternatives.

In studies, however, olive oil was clearly superior in terms of reducing the cardiovascular risk. Recommendable are further meals with much vegetable, milk products with low fat portion, fruit and its salt-poor food. Basically every vegetable is recommendable, only corn should be avoided.

Make sure that dairy products have a low fat content and prefer lean cheese, such as cottage cheese or granular cream cheese. Eggs are also desirable for a balanced diet. When consuming fruit, you should make sure that you prefer fruit varieties with as little fructose as possible.

These include avocado, papaya, honeydew melon and apricot. Also peaches, mandarins, nectarines, blackberries, raspberries, strawberries, grapefruit and pineapple still contain comparatively little fructose. Instead of white bread, wholemeal products should be consumed as they keep blood sugar stable for longer and provide a longer lasting feeling of satiety.

This includes, for example, wholemeal bread, wholemeal pasta and wholemeal rice. Unsweetened muesli and oat flakes are also recommended. For all these cereal products, however, the rule applies: Everything in moderation!

Because even an excessive consumption of “good” carbohydrates can promote obesity.Fish is very healthy due to its high-quality unsaturated fatty acids and should not be missing in the diet. Basically every fish is recommended, but you should avoid fatty breadcrumbs and sauces. According to the recommendations of the German Society for Nutrition, meat consumption should generally not exceed 300 to 600 grams per week.

Lean meat is clearly to be preferred over very fat-rich pieces. Filet pieces of beef and pork, as well as turkey and chicken breast are recommended. In addition, make sure you drink enough liquid (2-3 liters daily) in the form of water and unsweetened tea.

You do not have to do without coffee either. With fatty liver, there are a number of foods that should be avoided. Especially fatty and sugary snacks should be avoided.

You should also avoid sweetened drinks, fruit juices, soft drinks and alcohol. They drive up blood sugar, lead to ravenous hunger attacks and promote the development of fatty liver. In general, high-calorie snacks should be avoided.

Studies have shown that especially these snacks have negative effects. Sweets as well as salty chips and sugary snacks should also be avoided. Also avoid white bread, toast and durum wheat noodles.

Peeled rice, chips, pancakes and potato pancakes should also be avoided. Furthermore, fruit with a high proportion of fructose is not recommended. This includes grapes, pears, apples, mango and cherries.

Canned and candied fruit should also be avoided. Avoid animal fats such as lard or goose fat when cooking. Also sunflower oil, safflower oil, palm fat and clarified butter should be avoided.

The basic rule for dairy products is that all products with a low fat content should be preferred to products with a high fat content. Therefore, you should avoid fatty cheese, fruit yoghurts, cream, puddings, buttermilk and mayonnaise for the most part. Fatty meat such as Leberkäse, breaded meat, mortadella, meat sausage, salami, bacon and neck meat or fatty breaded fish should also be avoided.
