Structure and properties
Sodium ascorbate (C6H7NaO6, Mr = 198.1 g/mol) is the sodium salt of ascorbic acid (vitamin C). It exists as a white to yellowish crystalline powder or crystals and is readily soluble in water. Sodium ascorbate is a natural substance.
Effects
Sodium ascorbate has antioxidant properties and protects products from oxidation. In curing, it is used to inhibit the formation of nitrosamines. It inhibits the brown coloration of cut fruits.
Fields of application
As an additive for food, cosmetics and pharmaceuticals.
Adverse effects
Sodium ascorbate is considered safe and tolerable when used properly.
