Sorbic Acid

Sorbic acid is contained in many medicinal products as an excipient. This is in liquid, semi-solid as well as solid dosage forms.

Structure and properties

Sorbic acid (C6H8O2, Mr = 112.1 g/mol) exists as a white crystalline powder that is sparingly soluble in water. It is readily soluble in ethanol 96%. Also used are the salts such as potassium sorbate, which dissolves very well in water. Sorbic acid is a short-chain unsaturated fatty acid. It is a natural substance, but it is mainly produced synthetically.

Effects

Sorbic acid has antimicrobial properties and is mainly effective against fungi and weaker against bacteria. The effects are attributed, among other things, to the inactivation of a number of enzymes. This due to the formation of covalent bonds with thiols (-SH).

Indications for use

As a preservative for pharmaceuticals and foods (E 200).
