Unsuitable food

Caution with:

  • Rye, wheat, barley, oats and food made from them. Products such as flour, barley, semolina, flakes, groats, pudding powder, germs, grist and green spelt.
  • All commercially available types of bread, cakes, pastries, rusks, breadcrumbs and pasta, soya breads may contain gluten, millet and buckwheat pasta usually contain gluten.
  • Coffee substitute, beer (barley)
  • Sausage products may contain cereal products as a binding agent.
  • Fish products, canned fish, especially in sauces. Fried herrings, roast roll mops contain gluten.
  • Milk products may contain gluten as a binding agent.
  • Ready meals and all industrially produced foods such as potato products, soups, sauces, desserts, sweets, frozen foods, canned food, etc.
  • In case of doubt, always avoid the above mentioned foods!

Suitable food

Products specially made for gluten-free nutrition. They are marked with a crossed-out ear of corn and are mainly available in specialist shops or health food shops.Important information on the composition of a product can be provided by the list of ingredients, which is mandatory for packaged foods. However, gluten is increasingly being added to foods for technological reasons and then only appears under the declaration “vegetable protein product”.

  • All foods that are naturally gluten-free such as meat, fish, eggs, milk and dairy products without additives, fruit, vegetables, potatoes, corn, rice, millet, buckwheat, soybeans, chestnuts, juices, honey, jam.
  • Cereal starch may contain small amounts of gluten and should be avoided if it is highly sensitive.
  • Industrially manufactured products with the manufacturer’s note ” gluten-free”.

  • 90 g gluten-free bread (home-baked from a special flour mixture or ready-made Reformhaus)
  • 10 g butter, 25 g apricot jam

  • 100g curd cheese (20%) with 5g cress
  • 1 jar (125 ml) tomato juice
  • 100 g veal cutlet (or other meat)
  • 50 g rice (gross weight)
  • 200 g leaf spinach, 10 g cream, salt, nutmeg
  • Raw vegetables: 100 g carrots, 30 g apple, 15 g sour cream, spices, vinegar, oil
  • Vanilla pudding made from: 500 ml milk, 40 g corn starch, 40 g sugar, 1 egg yolk, vanilla pod (makes 4 portions)
  • Served with 50 g currants (fresh or frozen)
  • Coffee or tea, 50 g gluten-free cookies (health food store or home-baked)
  • 2cups of tea
  • Toast Hawaii:
  • 70 g gluten-free toast (health food store), 5 g butter, 70 g pineapple (tin), 40 g cooked ham, 40 g g gouda cheese (45% )
  • In addition over the day distributed 1.5 to 2 liters of beverages such as herbal tea, fruit tea, water, mineral water, thin juice spritzers
  • The daily example contains about 79 g protein, 80 g fat, 240 g carbohydrates, 2200 kcal.
