Agave Syrup

Products

Agave syrup is available from various suppliers, for example, in pharmacies and drugstores. It is mainly produced in Mexico.

Structure and properties

Agave syrup exists as a medium-viscosity, amber-colored liquid with a mild sweet taste that is easily soluble in water. It is extracted from various species of agave, including the blue agave , which is also used in the production of tequila. The leaves and the roots are removed and the so-called , the heart of the agave, is exposed. The liquid contained therein is filtered, purified and the carbohydrates (polysaccharides, inulin) are hydrolyzed mainly to fructose (content about 90%).

Effects

Agave syrup has a sweet taste. It is slightly sweeter than sugar or honey. Unlike honey, agave syrup is vegan – no insects are involved in its formation – and has a lower viscosity. It remains liquid and does not crystallize. Agave syrup increases blood sugar only to a small extent.

Areas of application

Agave syrup is used as a sweetener, for example in desserts, muesli, waffles, pancakes, drinks, smoothies or sweets.

Dosage

Compared to sugar, about 3/4 of the amount is needed because agave syrup is sweeter.

Adverse effects

Agave syrup has a high caloric value of over 400 kcal per 100 ml. It is mainly composed of fructose (fruit sugar), which is no healthier than other sugars – excessive consumption is associated with adverse effects.
