Isomalt is found in numerous processed products. As a pure ingredient, it is available in specialty stores.

Structure and properties

Isomalt (C12H24O11, Mr = 344.3 g/mol) exists as an odorless, white, crystalline powder and is readily soluble in water. It is prepared from sucrose and consists of a mixture of glucosesorbitol and glucose-mannitol. Isomalt belongs to the group of sugar alcohols.

Effects

Isomalt has a sweet taste. It is only about half as sweet as household sugar. Therefore, larger amounts are needed than other sweeteners, which are much sweeter than sugar. This also means that it adds volume and texture to foods. Isomalt has a lower caloric value than sugar (about half) and does not cause tooth decay. It is heat resistant and can also be used for cooking and baking.

Adverse effects

Isomalt may have a laxative effect in high doses (food intolerance). It is considered safe by regulatory authorities.
