German cuisine is becoming increasingly international: sushi, cous-cous, börek and paella may have come from foreign countries, but they have long since found their way into German households. Would you like to try truly exotic cuisine? Then think of sun, palm trees, desert and beach: Africa. African cuisine is varied, healthy and very tasty. And the best: all ingredients are also available in Germany in retail stores.
Simply extraordinary
Refined ingredients and a nevertheless simple preparation characterize the African cuisine. Lots of vegetables combined with exotic spices provide the healthy and unique taste. Due to the influences of numerous colonies and cultures, South African cuisine is particularly versatile, low in fat, easy to digest and therefore so popular.
African snacks
Below we present various African snacks that you can easily recreate yourself with our recipes:
- Bobotie, the South African minced meat casserole: mix 1 kg minced meat, 2 chopped onions, 2 tsp apricot jam, 1 dash lemon juice, 2 tsp chutney, raisins and curry powder and fry everything in a pan. Place in a baking dish, whisk 3 eggs with 220 ml milk, pour over the mixture, place 3 halved bananas on top. Bake in the oven at 180 ° C for about 40 to 50 min.
- The South African rice salad simply belongs to it: For this, mix 250 g cooked rice, 1 red and 1 green finely chopped bell pepper, 1 small finely chopped onion and 50 g soaked raisins in a bowl and stir in 1/2 cup each of yogurt and mayonnaise. Finish this salad with fresh lemon balm.
- Perfect on a skewer are the peri-peri prawns: The typical for South Africa Peri-Peri sauce you prepare with 2 chili peppers, 1 piece of fresh ginger, 1 clove of garlic and 4 tablespoons each oil and lemon juice. Puree the ingredients in a blender. Let about 1 kg of raw king prawns steep in the peri-peri sauce for 15 to 45 minutes. The longer the hotter. Spicy horseshoe bread – original African recipe.
Spicy horseshoe bread can be filled either vegetarian or with meat.
And this is how the spicy horseshoe bread is prepared:
- Mix 500 g flour, 1 packet of baking powder and a pinch of salt with 30 g small pieces of butter.
- Knead the dough with 125 ml of water and milk each.
- For the vegetarian filling is suitable 250 g of shaved cheese, 1 tomato, 2 pickles, 6 olives, 1 bell bell pepper, 1 clove of garlic and 1 small onion. Chop the ingredients and mix them all with cumin, turmeric and coriander.
- Roll out the dough about 1.5 cm thick to form a rectangle.
- Spread the filling on the dough and roll it all up.
- Shape it into a horseshoe and sprinkle with cheese.
- Bake for 15 to 20 minutes at 210 ° C in a preheated oven.
African sophistication: Avocado salad
Avocado salad is also not to be missed. The dressing is prepared with a chopped hard-boiled egg, red chopped onion, 1 tsp salt, the juice of one lemon, 2 tbsp vinegar and 100 ml olive oil.
For the salad, slice 4 tomatoes and 3 avocados and dress it with some iceberg lettuce. Serve with the sauce and some black pepper.
Healthy exotic refreshment
The refreshing ginger cocktail not only for hot days: for this, peel 500 g of fresh ginger and mix it with 50 g of fresh peppermint. Pour 2 liters of water into a bowl and stir the ginger–peppermint mixture into it.
Squeeze one pineapple, 4 oranges and 2 lemons and stir this into the mixture. Add 300g of sugar to taste and serve iced.
African dessert
For dessert, banana cakes are a must. To make them, mash 6 ripe bananas. Dissolve ¼ cup sugar in ¼ cup warm water and mix the mixture with 1 cup flour, some nutmeg and the banana puree. Bake small amounts of the batter in hot sunflower oil.
