Betanin is found as a colorant in many processed products, such as strawberry yogurts.

Structure and properties

Betanin (C₂₄H₂₆N₂O₁₃, M_r = 550.5 g/mol) is a natural dye obtained from beet ( var. ). It is the major constituent of betanin red, a mixture of substances from beet. Betanin belongs to the betacyans.

Indications for use

Betanin red is approved as a food additive (E 162) and is used as a colorant.
