Weight Watchers Christmas Menu: Main Course

Christmas the whole family comes together, there is a lot of talking and laughing – and of course eating. Even those who watch their figure want to treat themselves on these special days. However, many typical Christmas meals are high in fat and calories. Thanks to Weight Watchers, however, a delicious Christmas meal is no longer a problem. After all, a fine meal doesn’t automatically have to mean lots of calories and lots of fat.

Pickled fillet of venison with Brussels sprouts

Serves 6:

  • 750 g fillet of saddle of venison
  • 8 juniper berries
  • Grated zest of 1/2 untreated lemon
  • Pepper
  • 1 tablespoon balsamic vinegar
  • Salt
  • 2 tsp vegetable oil
  • 50 ml Madeira
  • 1 glass (400 ml) game stock
  • 4 tablespoons cream legere
  • 2 tbsp dark sauce binder (instant powder)
  • Approx. 1,500 g Brussels sprouts
  • Also: spaetzle or ribbon noodles at will, until you are full

Preparation

1. fillet of venison pat dry. Juniper berries crushed with the back of a knife. Mix juniper with lemon zest, pepper and vinegar. Rub the fillet of saddle of venison with it. Place in a freezer bag, seal the bag and marinate the meat in the refrigerator for about 4-6 hours.

Pat the meat dry. Season with salt. Heat oil in an ovenproof skillet or roasting pan. Brown meat on both sides. Deglaze with Madeira and pour in the game stock. Cook in the preheated oven at 200° C (gas: level 3, convection oven: 180° C) on the middle shelf for about 20 minutes.

Cook spaetzle or ribbon noodles in plenty of salted water according to package instructions. Let saddle of venison rest for approx. 5 minutes. Pour roast stock through a sieve into a small pot. Stir in creme legere and bring to a boil. Stir in sauce thickener and bring to the boil again. Season the sauce with salt and pepper. Drain spaetzle.

4. cook Brussels sprouts in salted water for about 20 minutes over medium heat, season with a little nutmeg. Slice fillet of venison and arrange everything together. Preparation time: about 20 minutes / marinating time: about 4-6 hours / cooking time (total): about 1 hour.
