Artichoke: Effect and Side Effects

The stimulation of bile production and liver-protective properties of artichoke are probably due to the content of cynarin, chlorogenic and neochlorogenic acids. Cynarin is also believed to be responsible for lowering blood lipid levels. Because of these beneficial properties, artichoke leaves could have great importance in the treatment of hardening of the arteries (atherosclerosis).

The improvement of digestive performance and stimulation of appetite is probably based on the content of cynaropicrin.
