Delphinidin: Definition, Synthesis, Absorption, Transport, and Distribution

Delphinidin belongs to the anthocyanins and is a plant pigment. It gives the beautiful blue coloration to delphinium and monkshood, flax and speedwell, bellflowers, and certain species of clematis. In pansies, lavender and vetches, it produces blue-violet to purple hues and also gives color to the blue-red grape variety of Cabernet Sauvignon. Delphinidin, like almost all other anthocyanins, is pH sensitive and changes color from blue in basic solution to red in acidic solution.
