Almond milk is a vegetable milk that is available in grocery stores, pharmacies, drugstores and health food stores from various suppliers (e.g. Biorex, Ecomil), among others. Almond milk is traditionally drunk in the Mediterranean region.
Structure and properties
Almond milk is made from the ripe seeds of the almond tree from the rose family. For example, the almonds are pureed and mixed with water and additives. White almond paste can also be used for the preparation. Various recipes exist. Almond milk has a creamy and nutty taste. Its ingredients include:
- Water
- Little protein
- Fat
- Carbohydrates, sugar, fructose, starch (partially added).
- Vitamins
- Minerals
- Fibers
- Emulsifiers such as lecithin (added)
- Stabilizers such as carrageenan (added).
- Flavors such as vanilla or chocolate (added).
- Salt (added)
Unlike animal milk, it contains no lactose, gluten, cholesterol and less saturated fat. It has a lower caloric value, unless sweetened. Almond milk contains fewer vitamins than milk (e.g. vitamin D, vitamin B12). The protein content is also substantial.
Fields of application
As a substitute for animal milk, for example for allergy sufferers (cow’s milk allergy), for vegans, in case of lactose intolerance and in case of celiac disease.
Dosage
Almond milk can be drunk cold or warm. It can also be mixed with coffee, cocoa or honey.
Disadvantages
Almond milk is not a full substitute for cow’s milk. It contains less protein and fewer vitamins (see above). It is also more expensive than conventional milk. Almond milk often contains additives. It is therefore not a purely natural product. Almond milk should not be used as a substitute for breast milk or formula.
