Who was Maximilian Bircher-Benner?

You’re probably familiar with muesli. Birchermüesli, an apple diet dish devised by Maximilian Bircher-Benner at the turn of the century, “d Spys” as he called it, is the ingenious implementation of his ideas.

His theory states that plant food contains the most solar energy and therefore is much healthier for humans than meat. According to his view, one should not cook the food if possible, because important ingredients are lost. With pride he explained that his raw food has almost the same protein, fat and carbohydrate content as mother’s milk. Maximilian Bircher-Benner also emphasized that “d Spys” was related to the food of Swiss alpine herdsmen, i.e. those people who supposedly embody the best of Switzerland and lead a particularly healthy life because they are close to nature. Thanks to Bircher-Benner, Müesli has become a household name around the world and across all language barriers. But watch out! What we eat today has little in common with the original raw food dish except for the name.

Therefore, here is the original recipe as a reminder. Take:

  • 1 tablespoon of oatmeal,
  • 3 tablespoons of water,
  • 1-2 apples (grated together with skin and core),
  • Juice of half a lemon,
  • 1 tablespoon of sweetened condensed milk,

mix everything carefully and sprinkle 1 tablespoon of grated nuts.
